These sticky smokey BBQ wings will have you double checking that they’re vegan. They are rich, fatty, and just a little bit spicy.

I have to say I definitely nailed these wings. They are the perfect mix of smokiness, charring, and spiciness. The most important and convincing aspect of these wings however, is the fattiness. Biting into these really reminds me of the days I used to eat wings and ribs. The mouthfeel is so accurate that I even had non-vegan family members not believing me when I said it was just mushrooms.
These mushrooms are pretty allergy friendly. It’s all about making sure you’re using your allergy friendly BBQ sauce and a spice rub. You can make the spice rub at home if you can’t find an accommodating one. There are plenty of great vegan BBQ spice rubs out there. I’m working on one of my own at the moment.This is a very similar rub to the one I used. It is vegan (obviously) and its the same brand that I used. It has very basic ingredients: McCormick Grill Mates Sweet & Smoky Rub.

SMOKEY VEGAN MUSHROOM WINGS
Delicious BBQ Mushroom Wings
- 8 King Oyster Mushrooms
- 2 tbsp oil
- 1 tbsp smokey bbq spice rub
- 6 tbsp Smokey bbq sauce
Step 1: Cut the tops and bottoms off the mushrooms and place the middle section in a bowl.
Step 2: Add the oil, spices, and bbq sauce. Toss them through to ensure they are evenly coated.
Step 3: Sear the mushrooms on a medium-to-high pan. Use another heavy pan to push them down. This flattens them a little bit and forces them to sear more evenly. Do this for approx. 5 minutes on each side or until nicely charred.
Step 4: Place in a baking tray and bake at 230C for 35 minutes. Serve with a drizzle of bbq sauce.
